It’s that time of year…football season! A group of our friends started a fantasy football league several years ago, and Monday (Labor Day) was draft day for our teams. Ha! I say ‘our teams’ as if I had one. My husband has his own team, but I only participate in the food-related events Continue reading →

These lovely individual soda breads and Irish whiskey butter will be part of tonight's St. Paddy's Day feast. A few Irish cheeses will be on the charcuterie board for a pre-dinner nosh, followed by a Stout and Lamb Stew for the main course. Irish coffees (decaf!!) will finish us off - in more ways than one! ... See MoreSee Less

~Royal Irish Soda Bread with Irish Whiskey Butter

The currants are soaked in Irish Whiskey for about 30 minutes. Once drained, they are added to the batter. Some of the drained whiskey is then mixed with a touch of brown sugar and Irish butter to be spread on the Soda Bread.

**Should any of the currant-flavored whiskey remain, it is up to you to decide how best to *dispose* of it. 😉

This year will mark the fourth Thanksgiving in a row that we are not hosting. I'm struggling to let go, to cede responsibility.

However...

I've brought out my Thanksgiving notebook (*of course* I have a Thanksgiving notebook! Doesn't everyone?? 😜), and I've dusted off a few of my favorite recipes. Already, there are Rosemary Walnut Sourdough Rolls baking, and I'll be making pie crusts next. All of this will go into the freezer to be stored until it's time to meet up with our loved ones and finish prepping the rest of the meal.

Though I am a little sad to not host, I am also so very thankful that we all get to be together this year. Pandemics have a way of highlighting what is important, and for me, being with loved ones over the holidays...and every day...is one of the most important parts of my life.

Hope all of you are staying safe and healthy!!
